Asparagus Soup

We just started harvesting our home-grown asparagus, but some of it grew to giant size before we got to it.... I'd like to make some homemade asparagus soup from these giant stalks. Could you add a recipe for that? Thanks! --your "fan-grandaughter" :) JoAnn
Hi fan-daughter, JoAnn! I understand your dilemma. I don’t have home-grown asparagus, but I see it piled up at the farmers’ market this time of year and just have to bring home bundles and bundles. I don’t happen to have an asparagus soup recipe on the site, but you could adapt my Leek & Mushroom Soup to make a terrific asparagus-leek soup. Simply substitute 1 pound of chopped asparagus for the mushrooms in step 2. If you’d like a chunkier soup with more texture, reserve some of the cooked asparagus (after step 2), then return it to the soup with the cream and milk and heat through. Delicious!
