Asparagus Soup

We just started harvesting our home-grown asparagus, but some of it grew to giant size before we got to it.... I'd like to make some homemade asparagus soup from these giant stalks. Could you add a recipe for that? Thanks! --your "fan-grandaughter" :) JoAnn
Hi fan-daughter, JoAnn! I understand your dilemma. I don’t have home-grown asparagus, but I see it piled up at the farmers’ market this time of year and just have to bring home bundles and bundles. I don’t happen to have an asparagus soup recipe on the site, but you could adapt my Leek & Mushroom Soup to make a terrific asparagus-leek soup. Simply substitute 1 pound of chopped asparagus for the mushrooms in step 2. If you’d like a chunkier soup with more texture, reserve some of the cooked asparagus (after step 2), then return it to the soup with the cream and milk and heat through. Delicious! And you’ll want to browse all my asparagus recipes on the Asparagus Page.
