Hi Penny, I have a couple of poultry recipes that you could easily adapt for a beef-and-barley dish. First, a stew: My Chicken & Barley Skillet would be delicious if you used ground beef instead of the ground chicken called for. (Or for a chunkier beef dish, you could use cubed or diced sirloin or chuck instead of ground beef. Just cook the beef for a couple of minutes in the oil in step 1 before adding the vegetables.) And for a soup, the easy Barley and Turkey Soup  could be made with ground beef instead of ground turkey. I hope you try one of them!
