Beef Tenderloin Roast

We are planning on roasting a whole beef tenderloin for carving with rolls & condiments. Is there a marinade to use for this? What spices should we put on it? --Frank
Hello Frank, I don’t  happen to have a recipe for whole beef tenderloin on Grandma’s Kitchen, but our sister site, EasyEverydayCooking.com has one: Tenderloin with Horseradish Cream. It’s seasoned sparingly before roasting, then finished with a tangy horseradish sauce. If you’d like to marinate the roast first, check out the marinade used in my Marinated Rib Roast. Or if you’d like a more piquant seasoning, use the mustard/garlic/pepper rub in my Peppered Beef Rib Roast. (If using  those preseasonings, you should then follow the roasting directions in the Tenderloin with Horseradish Cream recipe.)

    I have been trying to find a list/table of what and how long you can freeze leftovers such as meatloaf, lasagna, enchiladas in the freezer. I live alone and I keep throw away leftovers. I enjoy leftovers just find, however after the second time they are just too much. I would like to freeze some after I cook them. Can you provide me any guidelines?
