How do you take the bitter taste away from blackberries…please, please, PLEASE give me a helpful answer???

Hi Joelean! I’m terribly afraid I’m not going to be of much help to you. Just about the only thing I can tell you about bitter blackberries is: sugar, sugar, sugar. Most blackberries (especially wild blackberries) are just naturally bitter and the only way to make them palatable (to most people) is to prepare them with lots of sweetener, whether in baked goods or eaten straight from a bowl.
However, in the last few years, there have been a number of blackberry growers who have been cultivating varieties that are naturally sweeter. If you’re lucky enough to live on the West Coast, you might see blackberry hybrids called Marion and Byson at your grocery store or farmers’ market; if so, snatch them up, because they are sweeter (and more delicate) than most other varieties.
If you’re not lucky enough to find those sweeter blackberries, do try my Blackberry Cake, which uses 1 1/4 cups sugar to sweeten it!

Actually, what makes the blackberry bitter is the center of the berry and the seeds when you chew them. I usually eat around the center of the berry, squishing the little druplets to release the juice then swallowing the seeds whole. I also like to eat the whole berry also if I want the bitter taste. When you pair it with sugar, honey, xylitol or sweetened cream the bitter taste compliments it nicely. HTH!
