Cookies at High Altitudes

How do I make cookies in Nevada??! I live in what is considered high altitude (4200-4300 ft above sea level) and can't seem to get my cookies to rise at all. Quite frankly, I couldn't do it in Oregon either. I have fresh baking powder and baking soda, and the same cookie recipe my family has been using for generations. I just can't get them to rise. Great for hockey pucks though!

Oh, I’m sure you don’t want hockey-puck cookies! I’ve had a couple of people ask about baking at high altitudes. Back in January, Robert asked about high-altitude cakes. You can take the same advice and apply it to your cookies, but definitely use the lower end of the measurement recommendations, since you are at a lower elevation that he is. Let me know how it turns out!

    My sister was born in the early 1950's, she said my mother used to make a white "chocolate chip bar." The bars were white but had real chocolate chips in them. I've been trying to find a recipe like this. My mother didn't have a written recipe for it, but knew what she was talking about, she asked me if I recalled them and I didn't. I was wondering if you have a recipe and where I could find it.

    I have a problem and am hoping you can help me. I love recipes that have you put biscuits on top, like creamed chicken and biscuits. However the problem I have is that when you put them on top to bake, the underside of the biscuit never gets cooked. It's always still doughy and runny at times. How do I correct this to be able to bake them on top? Thank you for any help you can give :-) --Laura
