Corned Beef

Hi Betty, this might be a silly question, but just what is "corned beef"? --Jen

Hi Jen!

Corned beef is simply beef that has been cured with salt, a means of preserving meats before refrigeration was in common use. Years ago, the word “corn” referred to any small piece or granule, so beef was “corned,” or cured, with granules of coarse salt.

Interestingly, although Ireland was one of the largest exporters of corned beef centuries ago, it is not considered an “Irish” dish in the homeland. It was only the Irish who immigrated to the U.S. who embraced the food they had exported for years, making it a traditional dish in the Irish-American community.

As for Irish stew… Have you tried my Farmhouse Lamb Stew? With lamb, potatoes, and hearty vegetables, it is pretty darn close to a traditional Irish stew. To make it more authentic, omit the curry powder and add some beer or stout with the chicken stock

Hi Leona! I’m afraid I don’t have a recipe for Blarney Stone Cookies (and there seems to be all types of cookies out there that are called Blarney Stones). But you could make a fun blarney/Irish-type cookie with any of the following cookie recipes by adding some chopped green pistachios (or substituting them for the other nuts in the recipe):

Easy Butterscotch Bars
