Hi Woody, I do not recommend cooking corned beef in the microwave. This is because the microwave is best for quick-cooking food, or reheating already-cooked food. Corned beef, which is usually bought as a large (3- to 5-pound) piece of meat, normally needs at least 2 hours on the stovetop or in the oven, which doesn’t translate well to microwave cooking. However, if you want corned beef in a hurry, you can buy “fully-cooked” or “ready-to-eat” corned beef in most supermarkets around this time of year.
