Hi Lisa,
I’m guessing you might be making carrot cake? Because that’s where you usually find cream cheese frosting. But it’s also good on spice cake, pumpkin cake, even chocolate cake!
Here’s my best recipe for cream cheese frosting, but note that you can vary the amount of confectioners’ sugar, depending on how sweet you want the frosting and how sweet the cake is that you’ll be frosting:
In a large bowl with an electric mixer on low, combine 8 ounces cold cream cheese, 6 tablespoons butter, 3 to 4 cups confectioners’ sugar, and 2 teaspoons vanilla. Once combined, beat on medium speed until nice and fluffy, about 1 minute.
