Cream Cheese Frosting
Hi Ms. Betty,
I was just wondering if you have any recipes for a really good cream cheese frosting. I make a really good Red Velvet Cake but I fall short when it comes to the frosting. I would really appreciate if you could come up with an easy recipe. Thanks in advance.

Hi Ericka!
I have a couple of recipes for cream cheese frosting you could use. The first is a traditional recipe and is part of my Christmas Tree Cake recipe: Beat together 6 ounces softened cream cheese and 1/4 cup (1/2 stick) softened butter until creamy. Add 2 cups confectioners’ sugar and 1 teaspoon lemon juice and beat until creamy. You might also want to add a pinch or two of salt.
The other recipe is a little different in that it uses brown sugar, which gives the frosting a deeper flavor. It might be the special touch you are looking for. It’s a part of my Blackberry Spice Cake recipe:
Combine 1 cup firmly packed brown sugar and 4 tablespoons butter in a small saucepan. Cook over medium heat, stirring continually, until the brown sugar is dissolved; let cool. Place brown sugar mixture, another 4 tablespoons butter, 2 ounces softened cream cheese, 1 (16-ounce) package confectioners' sugar and 1/4 cup milk in a large bowl. Beat with an electric mixer set at medium speed until smooth.
I think either frosting would be great on Red Velvet Cake!

I have a "to kill" recipe for frosting to put on a Red Velvet cake, but it does not use cream cheese. My kids used to beg to get to eat some plain whenever I was icing the cake. Not too sweet, but delicious. It is a recipe handed down through my husband's family for years. I am at work, but if you want the recipe---e-mail me and I will try to send it too you.
