Is it unusual for a cookie recipe to call for a half tsp baking soda AND a half tsp of cream of tarter?
–Kelley
Kelley, Although it is not usual for a cookie recipe to use both baking soda and cream of tartar for leavening, it is not unheard of. For baking soda to do its work of leavening (or lightening) the cookies, it needs an acid to interact with and produce carbon dioxide. Most recipes use baking powder (which is a mixture of baking soda and an acid) for leavening. But some recipes do call for baking soda and a separate acid, such as cream of tartar or vinegar or lemon juice. You might want to check out our recipe or Glazed Vanilla Cookies, which uses baking soda and cream of tartar.
