Deep-Fry Fritter Alternative
Is there a substitute for deep-frying in recipes like Blueberry Dream Fritters?

Hi Mike,
Oh, dear – I really wish I could help you here. But since fritters are, by definition, deep-fried, I can’t really see a way around using a large quantity of vegetable oil if you want to enjoy my Blueberry Dream Fritters.
But perhaps you’d like to try one of my other brunch-type/snack-y recipes that are a little more calorie-friendly? Dusted Cocoa Popovers or Crunchy Potato Bites might satisfy a craving for a tasty, crunchy little bite--with less of a toll on your waistline.

QuestionI had the recipe card for Chicken & Dressing Bake and also for Ham Puffs. But my 12-year-old daughter, who now does a lot of baking thanks to Grandma's recipes, has misplaced them. Can you please share the recipes? The puff recipe was one where after you bake pastry puffs, you stuff them with tuna or chicken or cheese filling. My daughter makes them for church and family gatherings and gets rave reviews. --CarolMarch 2012
