What ingredients or technique make a cake dense and moist vs. crumbly and moist; more like the texture of banana bread than cake?
Good question! And not an easy one to answer since there are many factors that affect a cake’s texture, such as over- or underbaking, amount of leavening, oven temperature, etc. But generally speaking the TYPE of recipe that produces dense, moist cakes usually contains vegeteble oil (like banana breads) and/or an abundance of fat in the form of butter, sour cream, whipping cream, etc. (You’ll notice that light and airy angel food cakes usually contain no fat at all!)
