Easy Pound Cake
I prefer an easy pound cake. I've tried several different ones, but have not got it right yet.

Funny, Deondre asked about pound cake a little bit ago – you can read the question and my answer here: Pound cake question. And rest assured, all the recipes I mention are quite easy. And, of course, delicious! (P.S.: Don't worry if the top of the pound cake gets a crack in it -- that is quite common and doesn't detract from the taste of the cake. In fact, many people think it makes it taste better, because you get some crunchy pieces.)

QuestionI often buy boxed mixes -- rices, cornbread, pastas -- when they're on sale. I often don't use them right away and I've found I've gotten bugs in them, which is why I always pour the mix into a bowl before I put it in the pot. My question is, would it be safe to put the boxes in the refrigerator or freezer, so they would keep better? Would it compromise the quality of the product? Thank you, TinaMarch 2012

I have a favorite recipe from Grandma's Kitchen recipe cards for Nana's Banana Bread and needed to know how to adjust the cooking time for a 24 mini muffins pan. The baking time for the loaf pan is about 1 hour 15 minutes. I do not want to burn or dry out the small muffins. Thanks for your help.
