Falling Bread

Recently every time I bake bread, it falls in the middle (very much like a cake that falls). What can I do to prevent this? Or, what could be causing it? --Terry
Hi Terry, The most common reason for bread for falling or collapsing is letting the dough rise too much, so it becomes overproofed and fragile. Keep an eye on the dough when it is rising and make sure it doesn’t rise more than double its original volume.

    How do you keep a box of raisins fresh? I use a cup or so of the box then don't use them for a couple months and when I go to use them again they are as hard as a rock. I have tried putting the box inside a sealed bag but that doesn't work.
