Freezing Leftovers
I have been trying to find a list/table of what and how long you can freeze leftovers such as meatloaf, lasagna, enchiladas in the freezer. I live alone and I keep throw away leftovers. I enjoy leftovers just find, however after the second time they are just too much. I would like to freeze some after I cook them. Can you provide me any guidelines?

Indeed, it's a very good idea to freeze those leftovers to enjoy later! It saves time, money, and ensures you’ll always have a good meal ready and on hand. Here are some guidelines for freezing prepared recipes that I hope will help you.
In general, to prevent freezer burn it’s best to use wrapping paper designed for freezing (or aluminum foil if you can’t get your hands on that), then enclose the wrapped portion in heavier “freezer” bags, as regular plastic wrap alone isn’t adequate to prevent freezer burn.
Meatloaf: Since you live alone, you may find it most convenient to slice the baked meatloaf into individual serving sizes before freezing. Reheat in the microwave. Use frozen leftover meatloaf within three months. Leftover meatloaf is a natural for sandwiches, as a filling for casseroles, or as a topping for pasta, rice or noodles when mixed with your favorite tomato sauce. Casseroles, such as enchiladas and lasagna: Wrap individual servings of leftovers tightly in foil to avoid air pockets and use within four to six months.
