What if you can’t get fresh herbs when a recipe says I should use them?

Hi Vanessa! If you have a recipe that calls for fresh herbs you can substitute dried for the fresh. But dried herbs are much more strongly flavored than fresh, so use only one-third the amount. So if the recipe calls for 1 tablespoon (which equals 3 teaspoons) chopped fresh herb, use just 1 teaspoon.
And note that this substitution doesn’t work for large amounts of herbs. For example, if a pesto recipe calls for 3 cups of fresh basil, using dried basil just won’t work; the dried basil flavor would be too overwhelming and would not be at all like using fresh basil. So if you can’t find fresh basil for pesto, you’ll have to wait for summer when it is in abundance – or pick another recipe!
