Fresh Pumpkins

Why don't you have any fresh pumpkin recipes? We really need some because we have so many pumpkins! --Julia
Hi Julia, Most of my pumpkin recipes call for canned pumpkin because I want people to be able to make them all year-round – not just in the fall!  But did you know that you can substitute fresh pumpkin for canned pumpkin puree in any recipe?  “Grandma’s Secret Tip” at my Pumpkin Chiffon Pie tells you exactly how. (FYI:  A 5-pound pumpkin will yield 4 to 5 cups of mashed or pureed cooked pumpkin, and one 15- or 16-ounce can of pumpkin puree is about 1 3/4 cups.) What a great idea, Jo Ann! Then at Christmastime (or anytime), you can have your pumpkin pie and eat it, too!

We prepare our fresh pumpkin and freeze it in 2 cup packages. This way we have pumpkin for recipes all year long.
