Green Bean Casserole
I had one of your recipe cards for a green bean casserole. It used ranch dressing mix. I lost the card and could not find the recipe online. Can you help me?

Indeed I can, Rebecca! This is a popular recipe, no doubt about it. Although I don’t have the time today to put the recipe and picture on the site, I do know that there are a lot of people who want to make this for Thanksgiving, so I’m posting the recipe below.

Green Bean Casserole
There’s no better way to serve green beans than in this family favorite!
Preparation time: 15 to 20 minutes
Cooking time: 20 to 30 minutes
Serves 6
1 1/2 tablespoons butter
3 tablespoons all-purpose flour
1 1/2 cups milk
3 to 4 teaspoons dry ranch-style salad dressing mix
1/4 to 1/2 teaspoon white pepper
1 cup chopped onion
2 cloves garlic, minced
1 1/2 cups sliced fresh mushrooms
1 1/4 pounds fresh green beans, cooked until crisp-tender
1 cup fresh bread crumbs, toasted
1. To make white sauce, melt butter in small saucepan over low heat. Stir in flour; cook 1 to 2 minutes, stirring constantly. Using wire whisk, stir in milk; bring to a boil. Cook, whisking constantly, 1 to 2 minutes or until thickened. Stir in dressing mix and white pepper; set aside.
2. Preheat oven to 350°F. Spray medium skillet with nonstick cooking spray; heat over medium-high heat. Add onion and garlic; cook and stir 2 to 3 minutes or until tender. Remove half of onion mixture; set aside.
3. Add mushrooms to onion mixture remaining in skillet and cook about 5 minutes or until mushrooms are tender. Combine mushroom mixture, green beans and white sauce in 1 1/2-quart casserole. Combine bread crumbs with reserved onion mixture; sprinkle over casserole. Bake, uncovered, until heated through, 20 to 30 minutes.
Grandma’s Tip: When Grandma needed bread crumbs, she made them by hand grating day-old bread. Instead of using a sharp grater, try this easy method. Remove crusts from day-old bread slices and tear slices into pieces. Put pieces in a food processor or blender and process them using an on/off pulsing action until you have fine crumbs.

I am puzzled by the puff pastry method… the flour is to be just thrown into the boiling water, won’t it clump? What would happen if the flour and salt was first mixed with a bit of cold water? Would it still clump? Or what would happen? Or has it never been tried this way before?

Thank you so much for posting this!! I too had lost my recipe card and was searching the internet. Thank goodness I found it. This is definately a hit in my home! It is so much better than any other green bean casserole that I've had and fairly easy to make too!!
