Hard Brown Sugar
How do you keep brown sugar from getting too hard?

Well, the only truly sure-fire way to prevent brown sugar from getting hard is to be sure to use it up quickly! (That means more chocolate chips cookies, right?) Of course, there are also a couple of tricks that you can use to make brown sugar stay fresh once opened.
First, as soon as you open the package and use some of the sugar, transfer the remainder to a large heavy-duty, zip-top bag that seals completely. Then before sealing, add a couple of slices of bread – they’ll help the sugar retain moisture.
If your sugar still becomes hard, here’s how you can soften it: Put it in a bowl, drape 2 damp paper towels over the top of the bowl, and cover the bowl. Microwave for 30 to 60 seconds, but be careful the sugar doesn’t melt. You can also place the bowl (covered with the damp towels) in a 250F oven for about 10 minutes. Or if you have the time, just let it sit overnight on the counter (with the damp paper towel and cover).

Quite a few years ago, I received recipe cards from Grandma's Kitchen. I had a recipe for scallop potatoes that was fantastic. I have lost the recipe and would like to know if there is a way to get it from you.
