Homemade Macaroni and Cheese

Hi Betty,

I think you would be really good at making a big pan of homemade macaroni and cheese. I love the kind from the box on the stove, but I used to live at home with my parents, and my mom always made her homemade macaroni and cheese. So I need a recipe, because I don't have hers. Thanks.

Hi Stephanie!

Well, you’ve come to the right place! I do have a soft spot for mac-and-cheese from a box, but nothing beats the homemade! And I’ve got a number of absolutely terrific recipes for you to choose from:

 

Traditional Mac & Cheese is the traditional baked pasta dish, with Cheddar cheese and bread crumbs and made extra-rich with eggs.

 

Two-Cheese Macaroni is also a traditional baked mac, made delicious with Cheddar cheese, cottage cheese, sour cream, and elbow macaroni.

 

Grandma’s Macaroni & Cheese  includes bacon (yum!), tomato sauce and Cheddar cheese.

 

Three-Cheese Herb Pasta is not baked, but finished under the broiler; and it's just a little more grown-up, with fresh herbs and garlic, and Cheddar, mozzarella and Parmesan cheese.

    Can you use olive oil for baking and have the same results? I used extra virgin olive oil in a cornbread recipe and it didn't hold together and the flavor was not there.
