Keeping Marshmallows Fresh
After I use marshmallows (any size) how do I keep the rest of the bag from not sticking together and getting hard? Thanks.
--Ruby
Hi Ruby,
It's such a nuisance when your marshmallows dry out and stick together, isn't it? Luckily, I know some tricks that will keep marshmallows fresh. Store the rest of your marshmallows in a resealable zip-top bag or a plastic container with a tight-fitting lid to keep them from getting hard. If you're not planning on using them right away, pop them in the freezer and they'll keep indefinitely.
If marshmallows become sticky, simply sprinkle them with a little cornstarch or confectioners' sugar and shake until coated—voila! No more sticky marshmallows.
If your marshmallows are already dried out, no need to despair. Simply place a piece of apple or a slice of bread in a sealed container with the marshmallows, and they'll plump up again in a day or two.

Question
Dear Grandma Betty: I enjoy receiving your e-mail recipes very much! However, these days, people such as myself are interested in the calorie and nutrition counts of foods, including sugars, fats (especially trans-fats), and sodium levels. I only eat what I need nowadays, to my displeasure. Nevertheless, your Sunday Waffles recipe sounds delicious! Could you not introduce a good tasting recipe with less sodium and saturated fat (butter)? I leave substitute suggestions to you since you are our chef. THANK YOU! Sincerely,
—Bill
