Macaroni and Cheese with Artichokes
Do you have a recipe for macaroni and cheese with artichokes?
-Linda
Hello again Linda!
While I don’t have a macaroni and cheese recipe that specifically includes artichokes, I think that sounds wonderful! There’s no reason you couldn’t add some artichokes to my Traditional Macaroni and Cheese recipe, or to my Two-Cheese Macaroni recipe. You can use either fresh steamed artichoke hearts, frozen, thawed artichoke hearts or canned artichoke hearts (make sure in any case that you pat them dry first, otherwise they can thin out the cheese sauce). Fold them into the cheese sauce with the macaroni and bake as directed for a gourmet take on a classic comfort food. I do hope you try it and let me know how it turns out!

QuestionThanks so much for the red eye gravy recipe - I made it last night and it was just like Mama used to make; it was like "going home"! Now I have another question: I am very allergic to cilantro, which appears in so many Tex/Mex recipes (whole face swells up if I eat it). Is there ANYTHING ELSE I can use that will have at least a similar flavor? I tried parsley, but it did not do much. Any suggestions? --Nana RuthMarch 2012

Question
Will beef be cooked thoroughly if I don't brown it first? A beef and noodles recipe I want to try adds ingredients to uncooked beef that then is cooked in oven for 2 to 3 hours.
