Making Banana Bread Mini Muffins

I have a favorite recipe from Grandma's Kitchen recipe cards for Nana's Banana Bread and needed to know how to adjust the cooking time for a 24 mini muffins pan. The baking time for the loaf pan is about 1 hour 15 minutes. I do not want to burn or dry out the small muffins. Thanks for your help.

Hello Nancy,

It’s a great idea to use my Nana’s Banana Bread recipe to make mini muffins with!

To make mini banana bread muffins, keep the oven temperature the same (350°F) and start checking them for doneness after ten minutes.  They’ll take anywhere from 10 to 15 minutes.  The baking time will vary according to your own oven’s fluctuations and the amount of batter in each muffin cup. 

You would probably also like my Banana Nut Muffins recipe.  The instructions are for regular-size muffins, but you can bake them for 10-15 minutes for mini muffins.

    Would you happen to have the recipe for the old fashion cooked Date Roll Candy? My mother-in-law always made it at Christmas and I never did get that recipe. Everyone loved it and looked forward to her sweets. Thank you for your help.
