No-Bake Peanut Butter Cookies
Hi Betty, I have been searching everywhere and I can't seem to find my recipe card with your no-bake peanut butter cookie recipe. Will you please give me that recipe and help me out? I've been looking for it for days now. My dad wants some peanut butter cookies and I want to make them for him, they are delicious. Thank you for your time and wonderful recipes. God bless.

Peggy, do you mean Peanut Butter Crunch Bars, made with cornflakes, chocolate chips, and (of course) peanut butter? I’ve got the recipe right here for you! (I’ll add it to the recipe section in the coming weeks.)
Peanut Butter Crunch Bars
My grandmother was thrifty, so when we wanted to buy a candy bar, she made these treats instead.
Preparation time: 18 minutes
Chilling time: 20 to 30 minutes
Makes 2 dozen bars
2/3 cup light corn syrup
2/3 cup granulated sugar
1 (18-ounce) jar chunky peanut butter
3 1/3 cups cornflakes
2 cups milk chocolate chips
1. Combine corn syrup and granulated sugar in a medium saucepan. Bring to a boil over medium heat. Remove from heat.
2. Add peanut butter to the corn syrup mixture and mix well. Add cornflakes and stir until they are coated with peanut butter mixture. Press mixture onto bottom of an 11 x 7-inch baking dish.
3. Place chocolate chips in a small saucepan. Cook over low heat, stirring continually, until melted.
4. Spread melted chocolate chips on top of peanut butter mixture. Chill, covered, until chocolate is firm, about 20 to 30 minutes. Cut into small bars.
Grandma’s Secret Tip
“Don’t be impatient when you melt chocolate,” Grandma cautioned. She said overheating chocolate chips can cause them to “seize,” or clump together tightly in a mass, and if they do, there’s no reliable way to salvage the chocolate. So to make sure the chocolate didn’t seize, Grandma melted chocolate chips in the top of a double boiler over simmering, not boiling, water.
