As calorie-aware as I am today and also loving the chunky potato soup recipe, where can I find nutritional info for this delicious, one-of-a-kind recipe?

Thanks for your question, and your kind words about the Chunky Potato Soup – it’s a favorite of mine as well! I’m sorry to tell you, though, that at this time we are unable to provide nutritional analyses for our recipes. However, are you aware of the USDA's Nutrient Database? You can access the nutrition information (including calories, fat, fiber, sugar, carbs, etc.) for thousands of foods -- from simple ingredients (like onions or spaghetti) to prepared foods (like tomato sauce or chicken nuggets). The database is online at www.nal.usda.gov/fnic/cgi-bin/nut_s.pl.
In addition, I can tell you that if you’d like to keep the calorie count down when making the Chunky Potato Soup, be sure to use skim or reduced-fat milk, and maybe cut down on the amount of cheese – using 1/2 cup (instead of 1 cup) would still make a delicious soup. And finally, you might want to check out the recipes that are tagged “Healthy” on Grandma’s Kitchen: www.grandmaskitchen.com/tag/healthy. Although they are not specifically developed to be low-calorie, they are relatively healthy and you might find some dishes that fit in with your eating plan.

QuestionI often buy boxed mixes -- rices, cornbread, pastas -- when they're on sale. I often don't use them right away and I've found I've gotten bugs in them, which is why I always pour the mix into a bowl before I put it in the pot. My question is, would it be safe to put the boxes in the refrigerator or freezer, so they would keep better? Would it compromise the quality of the product? Thank you, TinaMarch 2012
