QuestionDear Betty, I frequently see "baking soda" as an ingredient in many baked goods recipes. Why is this? Is it really necessary? In addition, salt may be optional. If a person is attempting to reduce her/his SODIUM intake can't she/he do without either or both ingredients without really affecting the outcome/taste of the baked good(s)? QuestionI used to get the cards in the mail but one recipe has gone missing from my collection and no one will fess up. It was one of the 'keepsake cookies' and I think it was called Double Chocolate Chip Cookies. What I remember about them were that they were chocolate cookies with chocolate chips in them and that you had to refrigerate the dough overnight. It was a HUGE family favorite. Back in 2005, I received your cards; they were my first exposure to cooking from scratch and I still use some of the recipes now. One of my favourite recipes–and one that I’ve shared among many friends and family members because it is so good–was your chicken parmigiana recipe. It had a buttery cracker (like Club brand or similar) coating and mozzarella slices melted over it. It was quick, easy, and amazing. I no longer have the card and was disappointed to find that it isn’t among your collection. Though I’ve long since had it memorized, I had hoped to see it among the others and know that other families were enjoying it as much as mine does today.
