Salmon Cakes

How do you make salmon cakes?

--Wanda

Hi Wanda, I have a couple of salmon cakes that you should try: Tasty Salmon Cakes (the recipe name pretty much says it all!) are baked cakes made with poached salmon and potatoes. You could also use canned salmon, and fry them in a bit of vegetable oil instead of baking them. And my Salmon Corn Cakes, topped with a cheesy sauce, are perfect with canned or fresh corn.

How do you make old-timey rolled dumplings? My mother-in-law made the best; she had a special bowl she mixed them up in (never really measuring), she knew where in the bowl to add the flour, etc., then she rolled them out thin on a brown grocery bag and let dry for a while, then dropped them in the hot broth. They were delicious!!!!!!

If a recipe calls for self-rising flour but I only have all-purpose flour, what substitution can I use? I suppose it's baking powder.

Betty, Do you have a recipe for a Bing cherry pie? As a young girl I remember having one at Traverse City, MI. It included the whole berries and had a delightful glaze, with whipped cream on top. I can still almost taste it, but haven’t been able to duplicate it. Thanks, Janette
