Soaking Raisins

I am looking for an old Betty Crocker recipe for oatmeal raisin cookies that started with soaking the raisins - but I don't remember how to soak them or how long. --Kim
Hi Kim, Have you seen my recipe for Oatmeal Raisin Cookies? It says to soak the raisins in orange juice for 10 minutes – which is probably similar to your Betty Crocker recipe. If you don’t have orange juice on hand, you could use another kind of fruit juice or water (or even brandy or liqueur, if you are so inclined). FYI, soaking raisins plumps them, making them softer and juicier for baked good recipes.

    How do you keep a box of raisins fresh? I use a cup or so of the box then don't use them for a couple months and when I go to use them again they are as hard as a rock. I have tried putting the box inside a sealed bag but that doesn't work.
