Soft Gingersnaps
Soft Gingersnaps
admin
Hi Gramma Betty -
My ginger cookies tend to get harder overnight, and I'm still experimenting to try to get a softer cookie. What do you think I could do to give more softness? But what I was originally going to ask was if you had a good recipe for either ginger cookies, or gingersnap cookies? Thanks for your help! I love your recipes!

Hi JoAnn – so very nice to hear from you again!
Have you tried my Old-Fashioned Gingersnaps? They are my go-to ginger cookie. What’s especially great about these cookies is you can make them softer or crisper by altering the baking time: longer for crisp, shorter for soft. Since you like them soft, bake on the lower end of the scale, about 10 minutes. And how are you storing your cookies? To keep them soft (and also to keep crisp cookies crisp), you should store them in an airtight container. And try this trick: Add a couple of apple wedges to the (airtight) container – they’ll help keep them moist and chewy for a couple of days.

- Recently every time I bake bread, it falls in the middle (very much like a cake that falls). What can I do to prevent this? Or, what could be causing it? --Terry
- I tried to make beef stew in slow cooker; it came out too soupy and potatoes still a little hard. How long should it cook? Instruction book gives no clue, no recipe book, nothing as a guide. Thank you. --Connie
- Hi Betty, My friend has a cookie recipe that requires baking ammonia. Where can you buy baking ammonia? --Laura
- Do you have a recipe for any zucchini desserts? I think my mom tried zucchini in a pie instead of apple and it tasted just like apple. I have a recipe for bread, but that is it. Thanks, --Anishka
- I'm looking for an old-fashioned bread pudding. My grandmother made it for me when I was a child. It was a simple recipe that she sometimes put raisons in, otherwise it had a cinnamon taste. --Macie

- I would like to make Black Forest Cake. The recipe calls for the chocolate cake layers and the recipe isn't included on the card. Can you please tell me how to make those? Thank you, --Sanja
- Do you have a recipe for rhubarb-strawberry pie? Can you put a recipe up for strawberries or rhubarb? I've been looking for a recipe. Thanks. -- Bonnie
- I would like a recipe for Muffaletta (may not be spelled correctly). I have only found one place in Dallas that sells the sandwich and that is too far to drive for just a sandwich, so if I can find a recipe, I can make my own. Thank you, Gretchen
- I used to get the cards in the mail but one recipe has gone missing from my collection and no one will fess up. It was one of the 'keepsake cookies' and I think it was called Double Chocolate Chip Cookies. What I remember about them were that they were chocolate cookies with chocolate chips in them and that you had to refrigerate the dough overnight. It was a HUGE family favorite. Can you help me? --Anne
