Hi Eva! I have a couple of recipes featuring spinach that might interest you. My Cheddar Spinach Sensation is an egg casserole, perfect for brunch, lunch or a light supper. If you’d like to make it a casserole, you could add some more peppers, and maybe some chopped onion, and bake the mixture in a greased baking dish (not a pie crust) – it’d be wonderful.
