Substituting Zucchini in Banana Bread

Love "Nana's Banana Bread" and I wondered if I could substitute zucchini for the banana? Zucchini is a little more moist so I wasn't sure. Can I have your opinion? Thanks so much! -Deb

Hello Deb, I'm so glad you enjoy my Nana's Banana Bread recipe! While I have heard that some banana bread recipes work out just fine substituting an equal amount of zucchini for the banana bread, I have never tried it because I always use a recipe specifically for zucchini bread. Like you pointed out, zucchini is a little bit wetter, so I tend to play it safe. Nobody wants to go to all the trouble of baking and end up with nothing to eat! But you're in luck, because I have a couple of wonderful recipes for zucchini bread. Try my old-fashioned Zucchini Bread recipe, or if you're in the mood for something a little different, give my Chocolate Zucchini Bread recipe a try. They're both wonderful!
