Hi Carol, Head right on over to my Sweet on Sweet Potatoes article and you'll find easy instructions on how to make sweet potato fries near the end of the article. I also have a couple of recipes I think you'll want to try: The first is my Crispy Sweet Potato Chips, which are very thin slices of sweet potato, fried until golden and crispy. The second recipe is Oven-Fried Sweet Potatoes, which says to cut the potatoes into slices, but you can cut them into French-fry shapes, then prepare and bake as directed—but they may bake more quickly, so check them often.
