Texas Caviar

Do you have a recipe for Texas Caviar?

Hello Donna,

Traditional Texas Caviar is a marinated make-ahead salad consisting of black-eyed peas, chopped bell pepper, onion and celery, and seasoned vinaigrette.  Many Texas Caviar recipes also include green chilies, jalapenos, tomatoes, black beans, or cilantro, too. 

I do have a Cowboy Caviar recipe, which is like Texas Caviar but also includes avocado and corn for a bit of a twist.  But you can always adjust the ingredients to your liking for this recipe—the wonderful thing about recipes like this one is that you can really get creative to suit what you and your family enjoy!

And if you enjoy black-eyed peas, be sure to give my New Year’s Black-Eyed Peas recipe a try!  They’re delicious any time of year, but I always make them for on New Year’s Day for good luck.
