Using Banana Chips

I have some banana chips. Do you have any recipes that I can use them in?

—Angela

Hi Angela,

I don’t happen to have any recipes that call for banana chips, but I think you could use them in almost any recipe that calls for raisins, dried apricots, or any other dried fruit. Chop them up a bit and include in my Homemade Granola (or any granola, for that matter), Dried Fruit Bread Ring and Orchard Fruit Salad. They'd also be good in trail mix, mixed into your morning oatmeal, and sprinkled on sundaes (or even better,  banana splits!)

  • Question

Back in the 1990′s I collected Easy Everyday Cooking recipe cards. There was a recipe for ‘cheesy chicken roll-ups,’ with pounded chicken breasts stuffed with spinich, and I think ricotta & mozzarella. I secured them with toothpicks and remember browning in skillet, after that my mind goes blank. There was a cheese sauce that was poured over the stuffed rolled breasts baked in the oven. I’ve been looking for this recipe for almost 5 years, since noticing that it walked off somewhere. Can you help?

No tip. No question. Just that your recipes and tips remind me of my mother. She must be thinking about me. Thanks,
