I grind my own wheat to make bread for my son, who is allergic to many food items. The problem is getting the bread to rise…. Do you have any ideas?

Hi Nancy. First of all, you should know that whole-wheat bread simply doesn’t rise as much as bread made with white flour because it doesn’t have as much gluten. You can try adding a bit of gluten flour to your flour to help it rise more.
Beyond that, you should make sure your yeast is fresh by proofing it: sprinkle a teaspoon of yeast over a couple of tablespoons of warm water in a small bowl and add a pinch of sugar. The mixture should bubble and foam within a couple of minutes. If it doesn’t, the yeast is old and you should toss it.
