Zucchini Bread

Dear Betty,

Could you find me a good, low-fat zucchini bread recipe that will work at Mile High altitude? We cut back to one plant this year but we've still got so much zucchini that I fear my granite counter tops will cave under the weight. (P.S. Love that white hair!)

Hi Michelle,

Well, I can point you in the direction of a terrific recipe, Zucchini Bread, but I’m afraid it couldn’t be considered low-fat since it has a cup of vegetable oil in it! (It IS quite healthy and good for you, though.) If you like, you could reduce the fat count by replacing 1/2 cup of the oil with a 1/2 cup of applesauce.

    I often buy boxed mixes -- rices, cornbread, pastas -- when they're on sale. I often don't use them right away and I've found I've gotten bugs in them, which is why I always pour the mix into a bowl before I put it in the pot. My question is, would it be safe to put the boxes in the refrigerator or freezer, so they would keep better? Would it compromise the quality of the product? Thank you, Tina
