Eggs: Morning, Noon and Night
Did you know that you probably have in your refrigerator, right now, one of nature’s most perfect foods, one that is also so versatile that it can be quickly turned into breakfast, lunch, snack, dinner or dessert? Yes, indeed: The humble egg is perhaps the most versatile food in Grandma’s kitchen. Here’s how to enjoy nature’s wonder throughout the day:
Breakfast: Scramble or fry an egg or two to have with your morning toast, or make Easy Eggs & Asparagus, Farmhouse Eggs Benedict, French Toast Casserole or Breakfast Bread Pudding.
Lunch: How about an egg salad sandwich? Simply toss chopped hard-boiled eggs with mayo and a touch of mustard for an oh-so-quick sandwich filling; try Grandma's Garden Egg Salad for a bit of variety.
Or take a little extra time to make a big bowl of Mediterranean Egg Salad: Toss together flaked tuna, quartered tomatoes, olives, capers, torn lettuce leaves and cold cooked potatoes. Quarter a hard-boiled egg and arrange over the salad.
For an easy luncheon or brunch dish, lightly scramble eggs and pile on toasted bread or bagel halves. Then top with diced ham, smoked salmon pieces and watercress.
Snack: What could be easier: just peel a hard-boiled egg for a quickie protein snack in the afternoon. Have a little more time? make Almond Deviled Eggs. (See All ABout Eggs for the perfect way to boil an egg.)
Dinner: For an easy supper, whip up a quiche (Grandma likes Hash Brown Quiche) or try Grandma’s Instant Omelet: Spray an omelet pan with nonstick cooking spray. Beat two eggs with salt and pepper. Add to the pan and cook over low heat, drawing in the edges of the omelet with a rubber spatula as it cooks. Throw in some chopped ham, cubed cheese, bite-sizes pieces of cooked vegetables – whatever you have in the fridge. Fold the omelet over on itself when almost set.
Feeling like Chinese food? It takes no time to make a Farm-Fresh Stir-Fry: Stir-fry your favorite vegetables in a wok with crushed garlic and grated ginger. Set aside and keep warm. Lightly scramble one or two eggs in the wok, and then add the vegetables, cooked noodles and a little soy sauce. Toss well before serving.
Dessert: Meringue Melts are a wonderful sweet treat, and no one can resist Egg Custard Pie.
