Baked Beef Quesadillas

5 minutes“You can turn these easy quesadillas into a more cost-conscious dish. Simply substitute 11/4 pounds of cooked and well-drained ground beef for the flank steak.”
Ingredients
Serves 6
- 2 teaspoons vegetable oil
- 1 large onion, sliced
- 2 (4-ounce) cans chopped green chiles, drained
- 1/4 teaspoon salt
- 1 pound flank steak, cut into thin strips
- 8 ounces shredded Monterey Jack cheese
- 6 (10-inch) flour tortillas
Directions

Heat oil in a medium skillet over medium heat. Add onion. Cook, stirring occasionally, until tender, about 10 minutes.

Add chiles and salt to skillet; stir well.

Preheat oven to 400°F. Add steak to skillet. Cook over medium-high heat, stirring occasionally, until browned, about 5 minutes.

Layer Monterey Jack, onion mixture and steak over 3 tortillas. Place on baking sheets. Top with remaining tortillas. Bake quesadillas until cheese is melted, about 5 minutes. Cut into wedges.
