Chinese Beef Bake

30 minutes“This flavorful and bountiful dish is ideal for serving on buffets because it stretches easily to serve 8 or 9 people. Simply add an extra cup of rice in step 2. For bigger crowds, the recipe also doubles well.”
Ingredients
Serves 6
- 1 1/2 pounds ground beef
- 1 large onion, chopped
- 2 stalks celery, sliced
- 8 ounces sliced mushrooms
- 1 (10-ounce) can golden mushroom soup
- 1/2 teaspoon ginger
- 1 teaspoon garlic powder
- 1/4 cup milk
- 1/4 cup soy sauce
- 2 cups cooked rice
- 1/2 cup salted cashews
- 1 (5-ounce) can chow mein noodles
Directions

Preheat oven to 350°F. Cook ground beef, onion and celery in a large skillet over medium heat, stirring occasionally, until ground beef is browned and crumbly, about 10 minutes. Drain.

Add mushrooms, soup, ginger, garlic powder, milk, soy sauce and rice to skillet. Mix well. Spoon into a medium baking dish.

Bake casserole until heated through, about 20 minutes.

Sprinkle cashews and noodles over casserole. Bake until cashews are toasted, about 10 minutes longer.
