Flaky Beef Pockets

Ingredients
Serves 4
- 1 package (15-ounce) refrigerated piecrusts
- 1 pound lean ground beef, cooked, drained and cooled
- 11/2 cups chopped scrubbed Yukon gold potatoes (about 2 medium)
- 1/2 cup sliced carrot (about 1 medium)
- 1/2 cup finely chopped onion (about1 medium)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 teaspoon butter, cut into small pieces
Directions

Preheat oven to 375°F. Unroll the piecrusts according to the package directions. Roll 1 crust on a lightly floured surface to a 12-inch circle. Cut in half.

Combine the ground beef, potatoes, carrots, onion, salt and pepper in a large bowl. Top one side of each pastry half with one-fourth of the meat mixture. Dot each with one-fourth of the butter.

Fold the crust over the filling, pressing the edges firmly to seal. Place on a baking sheet. Cut 2 slits in the crust to vent steam. Repeat with the remaining crust and filling, making 4 pockets.

Bake until golden brown, 35–45 minutes. Cool slightly and serve warm.

Grandma's Secret Tip
Add an appetizing, golden gloss to the crust with an egg wash. Just whisk 1 egg with 2 tsp. water in a small bowl and brush the egg mixture over the crust before baking.
