Pork & Apple Stew

Ingredients

Serves 4 

  • 2 tablespoon vegetable oil
  • 2 medium carrots, sliced
  • 1 large onion, sliced
  • 1 clove garlic, minced
  • 1 1/2-pound pork roast, trimmed and diced
  • 1 tablespoon all-purpose flour
  • 2 cups chicken or vegetable broth
  • 1 1/4 cups apple cider
  • 2 medium Granny Smith apples, peeled, cored and sliced
  • 2 bay leaves
  • 1 tablespoon chopped fresh sage plus leaves to garnish
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
Directions

    Heat the oil in a large saucepan over low heat. Add the carrots, onion and garlic. Cook, stirring occasionally, for 10 minutes. Transfer the vegetables to a plate with a slotted spoon.

    Add the flour to the pot. Cook, stirring constantly, for 1 minute. Stir in the broth and cider. Bring to a boil, stirring constantly.

    Increase heat to high. Add the pork to the pot. Cook until browned, about 5 minutes. Return the vegetables to the pot.

    Add the apples, bay leaves, chopped sage, salt and pepper to the pot. Stir to combine. Reduce heat to low. Cover and simmer, stirring occasionally, until the vegetables are tender, about 1 hour. Remove the bay leaves.

    Divide the stew evenly among 4 large bowls. Garnish with the sage leaves and serve immediately.
