West Texas Baked Steak

45 minutesOne way to save a little money when making this hearty entrée is to use any leftover taco sauce you may have on hand. If you are a bit short, just use some tomato juice to make up the difference.
Ingredients
Serves 4
- 1 1/4 pounds boneless round steak
- 2 tablespoons vegetable oil
- 1 (8-ounce) jar taco sauce
- 1 (4-ounce) can chopped green chiles
- 1/2 cup shredded Monterey Jack cheese
Directions

Preheat oven to 350°F. Cut steak into 4 pieces. Pound to 1/2-inch thickness with a meat mallet.

Heat oil in a large skillet over medium-high heat. Add steak. Cook until browned on both sides, about 10 minutes.

Place steak in a baking dish. Pour taco sauce over steak. Bake, covered, until tender, about 40 minutes.

Spoon chiles over steak. Sprinkle with Monterey Jack. Bake, uncovered, until cheese is melted, about 5 minutes.

To save cleanup time, use a cast-iron skillet in step 2. Then leave the steaks in the skillet for baking in steps 3 and 4.
