Broiled Steaks with Parsley Butter

20 minutes“T-bone steaks come from the short loin, just behind the rib. You can save money by substituting a less expensive cut, the sirloin steak, which is located just behind the short loin.”
Ingredients
Serves 4
- 1/4 cup butter or margarine, softened
- 1/4 cup chopped fresh parsley or 4 teaspoons dried parsley
- 4 T-bone steaks (about 1 pound each)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Directions

Preheat broiler. Line a plate with waxed paper. Mix butter and parsley in a small bowl. Shape butter mixture into 4 logs. Place on prepared plate; cover. Chill until firm.

Sprinkle steaks with salt and pepper. Place on a broiler pan.

Broil steaks for 8 minutes; turn. Broil about 8 minutes longer for medium or until desired doneness.

Let steaks stand, loosely covered, for 5 minutes. Place on a serving platter. Arrange a butter log on top of each steak.

Baked Acorn Squash
Leftover baked squash can make an excellent soup. Purée the pulp from 4 to 5 squash rings, 1 cup chicken broth, 1/2 cup heavy cream and salt and pepper in a blender. Then heat the soup thoroughly.
