Hearty Cajun Stuffed Steak

20 minutes“If you do not have bread crumbs on hand, there's no need to buy any. Just reach for any packaged stuffing mix, croutons or even saltine crackers. Process in a blender or food processor.”
Ingredients
Serves 4
- 1 pound beef top round steak
- 2 teaspoons Cajun seasoning
- 1/2 pound bulk pork sausage
- 1/2 cup minced onion
- 2 cloves garlic, minced
- 1 (10-ounce) package frozen spinach, thawed, squeezed dry
- 1 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 teaspoons dry mustard
- 1/2 teaspoon salt
- 1 egg, lightly beaten
Directions

Pound steak into a 1/4-inch-thick rectangle. Sprinkle with Cajun seasoning. Soak 12 toothpicks in water.

Heat a large skillet over medium heat. Add sausage, onion and garlic. Cook until sausage is browned and crumbly, about 10 minutes. Drain. Preheat grill.

Add spinach, bread crumbs, Parmesan, mustard, salt and egg to skillet; mix well.

Spread filling over steak. Roll steak, jelly-roll style, to enclose filling. Secure with toothpicks. Grill steak over low flames, turning occasionally, for 20 minutes for medium doneness.

Save the time and mess of pounding the steak. Instead, purchase 4 cube steaks and fill with the stuffing. Grill as recipe directs.
