Mustard-Topped Broiled Steak

25 minutesDon't throw away any leftover broiled steak-save even small amounts. Combine the slices of mustard-topped steak with sautéed chopped onion and green peppers to create the filling for a Western omelet.
Ingredients
Serves 6
- 1 (2-pound) boneless top round steak, cut 1 1/4 inches thick
- 3/4 cup mayonnaise
- 1/4 cup seasoned dry bread crumbs
- 2 tablespoons prepared mustard
- 1/2 teaspoon onion salt
- 1/8 teaspoon paprika

Preheat broiler. Arrange steak on broiler pan. Broil 6 inches from heat for 10 minutes on each side for medium.

Meanwhile, combine mayonnaise, bread crumbs, mustard, onion salt and paprika in a small bowl; mix well.

Spread a thick coating of mayonnaise mixture over steak. Broil steak until mustard topping is bubbly, about 3 minutes longer.

Cut steak across the grain into thin slices.
