Scented Sirloin

If you do not keep red wine on hand, you can save the expense of buying a whole bottle. Just substitute 1 tablespoon balsamic vinegar, then reduce the white-wine vinegar by 1 tablespoon.

Ingredients

Serves 6 

  • 2 tablespoons vegetable oil, divided
  • 6 cloves garlic, minced
  • 1 tablespoon butter or margarine
  • 1 anchovy fillet
  • 1/2 cup chopped green onions
  • 2 tablespoons red wine
  • 2 pounds boneless top sirloin steak (about 2 inches thick)
  • 1 tablespoon pepper
  • 1 teaspoon salt
  • 1/4 cup white-wine vinegar
  • 1/4 cup water
Directions

    Heat 1 tablespoon oil in a small skillet over low heat. Add garlic; cook, stirring, for about 5 minutes. Add butter, anchovy and green onions. Cook for about 5 minutes. Add red wine.

    Meanwhile, cut a pocket in the side of the steak. Combine pepper and salt in a small bowl. Rub all over steak. Preheat grill.

    Stuff garlic mixture into steak pocket. Sear the steak in skillet over high heat until browned on both sides, about 2 minutes per side.

    Combine vinegar, water and remaining oil. Grill steak, brushing with vinegar mixture, until cooked to desired doneness, about 6 minutes per side for medium-rare. Cut into serving portions.

For a quicker fix, you can marinate the steak in the vinegar mixture and oil for 20 minutes. Stuff as directed and place the meat directly on the grill, eliminating the skillet cooking step described in step 3.
