Veal Chops with Flavored Butter

Ingredients
Serves 4
- 4 ounces blue cheese
- 1 tablespoon butter, softened
- 2 teaspoons fresh lemon juice
- 1 tablespoon finely chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 (1-inch-thick) veal chops (about 8 ounces each)
- 2 tablespoons olive oil
Directions

Preheat grill or broiler. Combine blue cheese, butter, lemon juice, parsley, salt and pepper in a small bowl. Mix with a spatula until smooth.

Spoon butter mixture onto an 18-inch piece of waxed paper; roll into a log. Chill for 15 minutes.

Meanwhile, brush chops with olive oil. Grill for about 5 minutes on each side for medium.

Place chops on individual plates. Divide flavored butter among chops.
