Beef and Broccoli with Orange Sauce

10 minutes“This Chinese-American favorite is ideal for stretching small amounts of leftover steak or roast beef. Just omit step 2 of the recipe, then add at least 3 cups of chopped cooked beef in step 4.”
Ingredients
Serves 6
- 2 pounds sirloin or flank steak
- 2 teaspoons cornstarch
- 2 tablespoons soy sauce
- 1 tablespoon dry sherry or white wine
- 1/4 cup orange juice (about 1 orange)
- 2 teaspoons sesame oil, divided
- 2 tablespoons vegetable oil, divided
- 1 onion, sliced
- 1 stalk celery, chopped
- 2 cups broccoli florets
- 2/3 cup water
- 2 teaspoons grated fresh ginger
- 1 tablespoon grated orange peel
Directions

Slice steak thinly across the grain. Combine cornstarch, soy sauce, sherry, orange juice and 1 teaspoon sesame oil in a small bowl or measuring cup; mix well.

Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add steak; cook until steak is almost cooked through, about 5 minutes. Remove from skillet; set aside.

Heat remaining vegetable oil in skillet. Add onion and celery. Cook, stirring, for 2 minutes. Add broccoli and water. Cover; cook until broccoli is crisp- tender, about 2 minutes.

Add ginger and orange peel to skillet; stir well. Add steak and sauce. Cook until sauce boils and thickens. Remove from heat. Add remaining sesame oil; stir well. Serve immediately.
