Braised Sirloin Tips

30 minutes“Use the leftover beef and rice to make a thrifty and hearty soup. Combine the meat, any leftover sauce, 11/2 to 2 cups beef broth and up to 1 cup cooked rice. Cook over low heat until hot.”
Ingredients
Serves 6
- 2 tablespoons vegetable oil
- 2 pounds sirloin tips, cut into 1-inch cubes
- 1/2 small onion, minced
- 1 (10-ounce) can beef broth
- 1/3 cup red wine or cranberry juice cocktail
- 2 tablespoons soy sauce
- 1 clove garlic, chopped
- 2 tablespoons cornstarch
- 1/4 cup water
- 6 cups hot cooked rice
Directions

Heat oil in a large skillet over medium-high heat. Add beef and onion. Cook, stirring occasionally, until browned, about 10 minutes.

Add broth, wine, soy sauce and garlic to skillet. Bring to a boil.

Reduce heat to low. Cover; simmer until beef is tender, about 15 minutes.

Combine cornstarch and water in a measuring cup. Stir into skillet. Cook, stirring, until mixture boils and thickens, about 1 minute. Serve over rice.

You can save time by omitting the onion in step 1 and adding 2 teaspoons onion powder in step 2 instead.
