Braised Sirloin Tips

Use the leftover beef and rice to make a thrifty and hearty soup. Combine the meat, any leftover sauce, 11/2 to 2 cups beef broth and up to 1 cup cooked rice. Cook over low heat until hot.

Ingredients

Serves 6 

  • 2 tablespoons vegetable oil
  • 2 pounds sirloin tips, cut into 1-inch cubes
  • 1/2 small onion, minced
  • 1 (10-ounce) can beef broth
  • 1/3 cup red wine or cranberry juice cocktail
  • 2 tablespoons soy sauce
  • 1 clove garlic, chopped
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 6 cups hot cooked rice

    Heat oil in a large skillet over medium-high heat. Add beef and onion. Cook, stirring occasionally, until browned, about 10 minutes.

    Add broth, wine, soy sauce and garlic to skillet. Bring to a boil.

    Reduce heat to low. Cover; simmer until beef is tender, about 15 minutes.

    Combine cornstarch and water in a measuring cup. Stir into skillet. Cook, stirring, until mixture boils and thickens, about 1 minute. Serve over rice.
