Creole Steak Strips

1 hour“Bell peppers, other than the green variety, can cost several dollars per pound. Using a green bell pepper will save money and the final dish will be just as colorful and tasty.”
Ingredients
Serves 6
- 1 tablespoon vegetable oil
- 1 1/2 pounds boneless round steak, cut into 1/2-inch strips
- 1 onion, chopped
- 1 cup sliced celery
- 1 cup vegetable juice cocktail
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 2 teaspoons Worcestershire sauce
- 1 medium green or red bell pepper, chopped
- 1 (10-ounce) package frozen cut okra, slightly thawed
- 6 cups hot cooked rice
Directions

Heat oil in a large skillet over medium-high heat. Add steak, onion and celery. Cook, stirring frequently, until meat is browned and onion is tender, about 10 minutes.

Add vegetable juice, oregano, cayenne pepper and Worcestershire sauce to skillet. Cover; cook until steak is tender, about 40 minutes.

Add bell pepper and okra to skillet. Cook until vegetables are tender, about 10 minutes.

Spoon hot rice onto a serving platter. Spoon steak and vegetables over rice.

The key to this recipe is cutting the steak into very thin strips. To achieve this, freeze the steak for 30 minutes before slicing.
